For today's lunch, I had a Broccoli Nuggets with tuna and cheese.

I have read from the net that cabbage is probably one of the best foods for cancer prevention. It is rich in antioxidants and has anti-inflammatory properties. 

For my lunch today, I prepared  a cheesy cabbage wrap.

In a pan, I sauteed garlic, onion and tomato and added 100 g of organic lean minced beef and chopped shitake mushrooms and wait until the beef is cooked.

I boiled water on a separate cooking pot with some chicken stock and placed the cabbage leaves so it would be softer.

After it's done, I wrapped the beef mixture on the cabbage leaves, add some mozzarella cheese on top and place it in the oven for 5 minutes, just enough to melt the cheese. Add some honey mustard on top of it.

Sweet potato might be one of the favorite carbs of those who are trying to control their carb intake. Aside from making you feel full for hours, it has zero fat and cholesterol but is high in potassium and Vitamin C.

Chicken-spinach sandwich with Sweet Potato Fries and Kiwi on the side. 

Sweet potato bread:
2 pcs mashed sweet potatoes
1 tbsp flour
1 egg
Seasonings

Bake for 15 mins

In a pan, sauté chicken and spinach and add beaten egg and wait until it form.

Sandwich the chicken and spinach into the sweet potato bread, add mozarella then heat in the oven until the cheese is melted.

Months ago I recreated a muffin recipe which is gluten-free and high in protein. 

Ingredients:
Freshly Grind Almonds
Chocolate Flavor Protein Powder
Brown Sugar
2 Eggs
Water

Mix all the ingredients and bake for 25-30 mins under 120 deg.
You can try any muffin recipe just replace the flour with almonds and the cocoa with protein powder. :D

I have seen lots of posts, from facebook to tumblr, recreating the traditional pizzas into a more creative and sometimes healthier one.

My ever so clever mind thought of some ideas in making a healthier pizza. Since I have a bok choy in the fridge, I thought of creating a bok choy (pechay) pizza.

For the dough, I mixed 3 spoon full of flour, a pinch of salt and some seasonings then slowly adding some cold water until I reach the consistency that I need. Since I don't want my dough to rise and to arrive to a thin crust consistency, I did not add yeast to my recipe. Then I rolled it to my desired thickness.

I let the dough rest for a few minutes while I prepare for the toppings. 

I chopped shiitake mushrooms and pechay and grated some mozzarella cheese. I spread some catsup in my dough and added the chopped ingredients and topped it with the grated mozzarella. I cracked an egg on top of it and put it inside a preheated oven for about 25 minutes under 160 deg. 

Bok Choy or Pechay is a good source of anti-oxidants, Vitamin C, Folic Acid and Potassium with a low carb content. On the other hand, shiitake mushroom, a popular asian ingredient, is a good source iron and protein. It aids in lowering cholesterol as well as aids in boosting your immune system and helps you in your weight loss.
